The tradition of “DUM” simmers in the juices of history. The story of “DUM” Biryani is as magnificent as restoring the ravaged glory of Awadh, Nawab Asaf-ud–Daulah ordered the construction of a giant edifice, the Bara Imambara. The monumental task was ingeniously completed through vessels filled with rice, meats and vegetables. They were then sealed and placed over hot charcoal fires. The slow cooking process ensured endless meals for the people of Awadh. Keeping those traditions alive which evolved flavors and fragrance intermingled, with exquisite results at B’s Biryani.
